Cake and Fillings

Cake, Filling and Decoration course is an intensive multi-day course. During the course, the following skills are learned:

  • Important information about the secrets of cake baking success and a full explanation of the materials that are used to prepare the cake (flour and sugar) and how to choose the right materials
  • A general explanation of the tools and equipment used for making cake
  • Explanation of scales and measurements
  • Explanation of the types of mixing methods of cake, sponge and ordinary
  • An explanation of how to start a cake and sweets project, what materials should be available at the beginning of the project, and how to price cakes for customers
  • Practical application for preparing several types of cakes: sponge cake / Swiss roll / chiffon cake / chocolate chiffon cake / carrot cake / red velvet cake / nuts cake / lemon cake / pound cake / banana bread / heavy chocolate cake…etc.
  • Practical application of all types of creams and fillings, including fillings and packaging: Patisserie cream / Italian butter cream / Ganache/ Cheese mousse / lemon filling / Bavarian cream / Diplomat cream / Jacquetta Clays / Italian meringue…etc.
  • A practical application on how to fill and arrange cakes as molds and pieces
  • A practical application on decorating and decorating the cake with cream and how to make flowers and other decorations.

 

Each participant will receive at the beginning of the course a book including recipes and cooking apron. Moreover, all stuff that the participant used during the course will be owned by him/her, and also the cake that he/she made. At the end of each course, the trainee receives a certificate signed by Cake Design Vienna, signed by Chef Hala.
